Carolyn Janssen was a professional artist before she opened A Better Cheesecake 19 years ago. You can sort of tell. Carolyn brings an artist's flair to her creations, an artist's attention to detail, an artist's taste. Sure, you can have the traditional three-tiered wedding cake with a bride and groom on top. But how about a cake shaped like a flip flop for your friend, the beach bum? Or one with a cap (but no gown) for that son of yours who, miraculously, managed to graduate from college? (Or one shaped like a foosball table for the one who didn't?) Then there are the different flavors to choose from -- the 11cake flavors (not counting fillings) plus an additional 18 different cheesecake flavors, including blueberry and creme de menthe. How good are Carolyn's cakes? Well, in her 19 years of business, she has made wedding cakes for newly-weds, only to be asked by the same couple some time later, to make a cake celebrating the birth of their first child. Now, that's a legacy.
